02Formulation considerations

Fortification works only when every unit of food carries the intended amount of vitamin. Because vitamins are added at very low levels relative to the food, the ingredient must suit the way it is dosed — metered into oil, dry-blended into flour or powder, or dispersed into milk. Format, carrier and potency are matched to your dosing method so the vitamin distributes evenly through each batch.

Vitamins A and D3 are sensitive to oxygen, light, heat and moisture, and fortified foods may be heat-treated, stored for months and packed in many formats. Microencapsulated powders, oil systems with suitable antioxidants and protective packaging help, and the right combination depends on the matrix and the process. Where stability information is available for a grade, it is shared with the specification.

The carrier matters as much as the vitamin. A premix for wheat flour needs a carrier that flows and mixes like flour, while a premix for edible oil must be fully oil-miscible. Carriers and excipients are declared in the composition statement so your regulatory team can assess them against the finished-product label and local rules.
